However, the low yields were of exceptional quality.\u0026amp;nbsp;\u003c\/p\u003e\n\u003cp\u003eDomaine Les Pallieres only produces two red wines, the ‘Racine’ and the ‘Terrasse du Diable'. The property is located at the extreme north of the appellation, with primarily a northern exposure, all vineyards are organically farmed with selective hand harvesting and first sort in the field.\u0026amp;nbsp;\u003c\/p\u003e\n\u003cp\u003e90% Grenache, 5% Mourvèdre, 5% Clairette. Grapes are partially de-stemmed and pressed gently by pneumatic press and fermentation takes place with indigenous yeasts.\u003c\/p\u003e\n\u003cp\u003eGrapes are grown on the higher altitude terraced vineyards than those used for the Racine. After a period of ten months ageing in concrete vats, the wine is aged in large oak foudres also for ten months.
