Rather than concentrating exclusively on traditional fortified Sherry, he works with unfortified \"vinos de pasto\", old local varieties and unusual winemaking techniques. His wines can involve skin fermentation, amphora, flor ageing and used Manzanilla and Amontillado barrels, as well as varieties and techniques inspired by his international experience.\u003c\/p\u003e\n\u003cp\u003e100% Moscatel, from El Puerto de Santa María, Jerez, on albariza soils. Aged in two 350-litre Cognac barrels: one under flor, the other topped up religiously every week. No bâtonnage with reductive lees ageing.
