Tasting Note: 
The color is quite dark with a green hue around the edge, the nose is dominated by oxidative notes and wood, lots of sour dough and some walnut. The palate is very salty, dry and saline, with notes of low tide and seaweed with a very long dry finish. Extremely concentrated and long.

Additional Information: 
This extraordinary amontillado comes from the El Aljibe vineyard in Pago Añina and combines wines from six criaderas with an average age of around 40 years. The wine is bottled with minimal filtration and no fining. 
Bodegas Poniente sherries are the product of the thoughtful blending of precious, treasured soleras and criaderas from the 18th and 19th centuries, refreshed in the traditional method each year with wine from our own organically farmed estate vineyards (San Cristóbal, San José y El Aljibe) in the Pago Añina, one of only three Pago sites in Jerez designated as Jerez Superior. They are one of the few bodegas that age their wines surrounded by the vineyards, the wines are produced and aged within the historical estate, a restored house tucked among the vines of El Aljibe.
