Complex nose of yeast, toasted almonds and walnuts, hints of nail varnish and tobacco. Crisp and refreshing with good acidity leading onto a rounded palate of hazelnuts and more almonds, orange peel and hay. Salinity on the finish.

Additional Information: The bodegas were founded in 1889 by Primitivo Collantes and his brother Tomás. Based in Chiclana de la Frontera, within the Production Area of the Jerez Denomination of Origin. The Palomino Fino grapes planted on albariza soils come from Viña Matalián, a 40-hectare vineyard on the outskirts of Chiclana, well divided by sectors according to the characteristics of the soil.
The Amontillado Fossi has approximately 15 years of aging, five under flor and 10 oxidatively.
