7 years of biological ageing in a solera of Blanquito Manzanilla Pasada then a further 4 to 5 years further oxidative ageing.
The Blanco brothers who produce this wine are firm believers that vineyard terroir and vine are the heart of good wines, their bodega houses 700 butts, along with pressing, ageing and bottling facilities, empowering them to do everything from vineyard to bottling.
Mosto for this bright Amontillado is produced from Palomino Fino from their 3 vineyards, approximately 30% Macharnudo 50% Añina and 20% Callejuela.


They delay the harvest as late as possible so that their wines always retain their structure and varietal personality through the biological ageing period.
The brothers have over 28 hectares of vineyard distributed between Jerez and Sanlucar. 4.5 hectares in Viña de la Choza in Pago Macharnudo & 8.5 hectares Las Mercedes in Pago Añina and 16 hectares vineyard in Pago La Callejuela.
