A complex and aromatic wine. Fresh notes of pear and white peach with white flowers. Crisp and tense in the mouth, clean and full of flavour.

Additional Information: Mathilde Savoye set up her own Champagne operation in 2017 with the desire to break away from her family’s traditional winemaking style in favour of more sustainable practices. She has 3.5 hectares of vines in the Marne Valley region where she makes wines from 100% Pinot Meunier.
Pinot Meunier, is the focus of the region and well matched to the microclimate and limestone soils.
Grapes were hand harvested in early September across four days from two plots; ‘Les Chapelleries’ located in the town of Cuchery, and a second plot called ‘La Loge des vignes’ located in the town of Baslieux-sous-Chatillon. Vines are aged 55 years and 15 years respectively.
The wine spent five months in stainless steel vats after harvest. Malolactic Fermentation was prevented. Aged on lees for 27 months. Bottled February 2020 and disgorged: July 2021 Dosage was six grams per litre
1,600 bottles produced with an additional 80 half bottles and 40 magnums.
