Intense on the nose with aromas of ripe peaches, white flowers and fresh yeast. Complex palate with lemon zest, red apple skin, preserved lemon all underpinned by a beautiful saltiness. White flowers and fresh herbs on the long finish.

Additional Information: Cota 45 is the project of Ramiro Ibáñez, a prestigious oenologist from Jeréz who works as an adviser in different wineries of the Sherry Triangle. He built his Bodega in a boat repair shop overlooking the Guadalquivir river focusing on recovered native varieties and experimenting with the different "albariza" soils. The name refers to 45 metres above sea level, the point where Ramiro believes the best albariza soils can be found.
With Cota 45, Ramiro seeks to make manzanilla in a traditional way without fortification and with shorter ageing bottling separately from three individual plots of the farm Pago de Miraflores, Miraflores Alta and Miraflores Baja, with several types of albariza soils.
After fermenting in Sherry butts, it is aged for 8 months in selected butts with presence of the yeast cap (velo flor) in the last 2 months.
