Jean-Christophe is focussed on low yields with minimal intervention in the winery in order to showcase the terroir, which include six Grand Crus.
Grapes are manually harvested before natural fermentation taking place from three to six months using indigenous yeasts. No filtration is used but wine is racked and allowed to gradually clarify. Aged on the lees for four to eight months giving complexity before being bottle aged and released.
