Henri Le Roy began his career as a scientist in the pharmaceutical industry, but he’d never felt that the corporate life suited him. Rather, his passion always lay with wine. He farms around 5 hectares of vines in the Vincelles area of the Jura. Henri named his estate Domaine de l'Aigle à Deux Têtes, which means the “Two-Headed Eagle,” as a nod to the Habsburg dynasty which ruled the Franche-Comté region from 1477–1678.
Henri buys in grapes for this traditional method sparkling wine from his trusted network of growers. The grapes for crémant typically come from the flatter vineyards where the grapes are easy to train. Henri says it is important that the grapes have high acidity and come from vineyards with higher yields.
Grapes are handpicked from vineyards in Le Vernois made from 80% Chardonnay and 20% Pinot Noir. Although labelled as non vintage the grapes are from 2022 from young vines less than 15 years old. Farming is sustainable (not certified).
6 months in stainless steel with a dosage of 3.6g/l and is disgorged after 12 months on lees. No fining and gentle filtration. Low SO2
