A clear, pale gold in colour with excellent bubble formation. Distinctive aromas of tart green apples, pears and citrus fruits on the nose. An exotic palate of bananas, peaches, toasted nuts and caramel. Excellent floral acidity and a toasty finish.

Additional Information: The Plageoles family have been vignerons in Gaillac since 1805 and is currently run by Florent and Romain. The family have created an unrivalled collection of ancient local and long-lost Gaillac grape varieties that were not replanted by the local vignerons after their own vines were destroyed by phylloxera, the Plageoles luckily escaped due to their deep clay - limestone soil. Without this family many of these grapes would have become extinct.
Gaillac receives more sunshine than Bordeaux with a cool maritime climate. There are 23 hectares of the white Mauzac and Ondenc, and seven hectares of Duras, Braucol and Prunelar all grown strictly according to organic principles (not certified), using only naturally occurring yeasts with minimal sulphur added.
Gaillac’s very long history of producing méthode ancestrale sparkling wines goes back to the 1500s, before champagne.
The fermentation is stopped by a series of rackings; the wine is bottled before all of the sugar is converted into alcohol, the residual sweetness, therefore, comes entirely from the grapes. After several months, the residual natural sugar starts to re-ferment and this produces the sparkle or bubbles. The wine is kept on the lees and not disgorged.
