Additional Information: In 2021 they bottled the eighth vintage of Florpower (MMXX, that is, 2020), number 107 of the LA BOTA series. La Bota de Florpower 107 MMXX is an unfortified white wine, essentially coinciding in its origin and production process with the 2010 and 2012 vintages, which were the 44th, 53rd and 57th editions of the series, even more so with the 2014 vintage, La Bota de Florpower MMXIV 67.
Going forward an inaugurated style followed with vintages 2015 (edition 77), 2016 (edition 84) and 2018 (edition 97). Then 2019 (edition 99) was exceptional in several ways, mainly because it had no flor at all and with the 2020 (edition 107) they moved one step further towards what is believed to be the point of balance and freshness for a perfect expression of the vineyard through the biological ageing process, shorter than in previous vintages.
Just a couple of months of rest and gentle ageing under flor in a steel tank after the initial period of intense biological ageing in traditional 600-litre Sherry casks.
Coming from 100% Palomino Fino grapes from the Sanluqueño vineyards with vines between 55 and 85 years old located in the Pago Miraflores La Baja, again in this 2020 vintage the wine was fermented in the old style, in the same casks in which it was later fermented and raised under the veil of flor. After fermentation, it was aged under flor yeasts for eight months.
In May 2021, the wine was removed from the barrels and placed into a stainless steel tank where, always under the much more subtle influence of flower yeasts, it remained until it was bottled in July of the same year.
EQUIPO NAVAZOS are very interested in the potential for the excellence of ageing under a veil of flor at a natural graduation, without fortification.
In addition, various ageing experiments both in barrels and in tanks with Palomino Fino and Pedro Ximénez wines from different areas of the Marco and Montilla-Moriles, and from other wine regions in the northwest and northeast of Spain have taken place.
Experience has shown that, in the end, the vineyard always prevails regardless of the intensity and duration of ageing, which is why new bottlings increasingly tend to limit the latter.
