Classic dried figs, walnut,clove and polished furniture that all accent its salinity. Malty notes, toffee and bruleed sugar with some earthy, truffle notes in the background. On the palate flavors of iodine, salt and the signature earthy dampness of Hidalgo's very old soleras, vibrant acidity and wonderful nutty notes on a gentle finish.

Gobernador is a dry Oloroso of around 12 years old, produced by Bodegas Emilio Hidalgo. The wine starts its life with a 2-3 year period of biological ageing under a layer of flor, and then spends another ten years or so ageing oxidatively, slowly turning into an Oloroso.
Serve as a stand-alone aperitif or as a wine, with any savoury foods such as stews, fish and meats, perfect for clams sautéed with olive oil, garlic and Jamon or Mushroom.
