Dominio do Bibei has been instrumental in driving up the quality in the Ribeira Sacra valley and is passionate about the survival of the area’s old, indigenous vines in this rugged landscape. The family own 140 hectares, 45 of which are planted to vines. The winery is built on a steep hillside and designed to allow gravity to move the wine through the production process.
The grapes for the Lalume are from vines 10 to 30 years old grown at 200m to 700m on North facing slopes in the Avia, Arnoia and Miño valleys. Soil is schist and granite soils, flecked with slate, quartz and iron. The large differences between day and night time temperatures help to concentrate the flavours and aromas of the fruits. Grapes were hand-picked and sorted in the vineyard, with the vineyard parcels processed separately based on zone, soil type and elevation. Fermentation using indigenous yeasts took place in a mix of 600L new and old barrels, 1200L and 2400L casks, egg shaped concrete tanks and 2000L stainless-steel tanks. The wine was then aged on fine lees in 12,000L stainless-steel tanks before bottling.
