Intensely aromatic, melon, ripe pear, pineapple, lychee and white flowers with hints of butter. Rounded yet fresh on the well-structured on the palate with hints of spice on the finish.

Additional Information: Christophe Mittnacht and his cousin Marc run this 23 hectare farm and have some of the finest sites around Ribeauvillé and Hunawihr, including the Grand Cru Rosacker and Grand Cru Osterber. They were one of the first domains in Alsace to convert to biodynamic viticulture in 1999.
Gyotaku was created through the marriage of a French winemaker and a Japanese chef. Aromatic, dry and fresh to complement fish, with enough character to stand up to soy and wasabi. "Gyotaku" is a traditional Japanese art created with fish, ink and paper.
40% Pinot Auxerrois, 20% Pinot Gris, 20% Gewurztraminer, 15% Riesling and 5% Muscat from 30+ year old vine from multiple parcels in the the villages of Hunawihr and Ribeauvillé. Soil is clay and limestone. Manual harvest with pressing of whole grapes. Fermented and aged in large old foudres using indigenous yeasts. Aging on fine lees in casks for 6/9 months Blending carried out after clarification of the wines.
