Tasting Note: A dry, savoury, salty wine, made with grapes from a famed vineyard near Sanlucar, that has aged slowly for many years and developed an incredibly complex character.
This wine is a true ‘en rama’ style, bottled from a single cask without fining, filtration or any other aggressive treatment.

Bodegas Cesaar Florido is a fifth-generation producer, with the sixth waiting in the wings to take over the reins. Based in Chipiona the bodega lies a little outside the classic Sherry triangle though in some ways this has been to their advantage, during the trials and tribulations Sherry over the last few decades. Their warehouses lie right on the coast though, literally metres from the sea, and they source grapes from some of the very finest vineyards in Jerez.

Always serve it chilled in normal-sized wine glasses, preferably with some slices of jamon, olives, anchovies or some fried seafood.
