Practising Organic for two years (not certified), wine maker and artist Ján Zaborsky continues to use the traditional techniques passed down through the generations of his family.

The terroir is unique with volcanic soils composed of around 140 different minerals. 40 year old vines grown at an altitude of 200m, on south facing slopes. Grapes are de-stemmed and macerated for four weeks. Natural fermentation in open vats using native yeasts then aged for 12 months in old French oak barrels with a proportion in new 300 litre barrels.

Will pair with duck, meatballs, tomato based sauces and dishes containing mushrooms.

Ageing potential five to eight years.
