Additional Information: Located on the first slopes of the Pyrenean foothills, the Saint Mont appellation covers 46 communes in the west of the Gers department. It has a cool micro-climate and extremely fertile terroir. Saint Mont is the reference appellation in terms of grape varietal research (ampelography) and home to the first vineyard listed as a Historical Monument in 2012 and the first private conservatory in France in 2002.
Plaimont Producteurs was founded during the 70s after merging three co-operatives and today includes some of the region’s top estates and châteaux with their aim of using research to help to prepare vignerons and growers for the challenges of the future. The union promotes the use of re-discovered indigenous grape varieties.
The different grape varieties were harvested at night in order to preserve their aromatic qualities, and then vinified separately. The Gros Manseng underwent a 6-8hr maceration on skin, all varieties were very pressed very gently in a pneumatic press and the juice was left to settle. Fermentation at a controlled temperature in stainless steel. Eight months’ ageing on the fine lees in stainless steel vat.
