Intense aromas of honey, ripe pear, caramel and candied orange. Grip on the palate, with layers of honeysuckle, citrus and sweet spice, hints of vanilla and honeycomb leading to a long and complex finish. Rich and powerful, yet balanced against a mineral salinity. Beautiful.

ABV: 12.5% Bottle Size: 75cl Organic, Biodynamic, Sustainable Farming
Additional Information: Tablas Creek was established in 1987 by two leading wine families: the Perrin family, founders of Château de Beaucastel and the Haas family, owners of the US importer Vineyard Brands.
In 1989, they purchased a 50-hectare parcel in west Paso Robles importing cuttings from the Beaucastel estate and establishing their own nursery to propagate their cuttings which were used to replant their vineyards. The estate has been certified organic since 2003 and biodynamic since 2017.
Vineyards are located twelve miles from the Pacific Ocean and with an average altitude of 450m. Soil is shallow; rock and limestone. The grapes are hand-harvested in separate batches. After they are cluster-pressed, the grapes are fermented in small batches in authentic French and oak barrels. Aged in a mixture of foudres, neutral oak puncheons and 50% small new barriques.
The wine has been produced since 2000. Drinking well now but will continue to age for up to 15 years, developing notes of caramel, wet rocks and hazelnut.
