Today there are five hectares farmed in balance with the local environment, all grapes are harvested by hand in Autumn at the optimal time for both acidity and ripeness. Only small batches are produced to ensure maximum quality. Harvest to winery is very short (can be counted in minutes), preserving the fresh flavours and aromas. This wine is tank aged on the lees, producing a round and elegant wine
