Valdespino 'Inocente' Fino
Straw-yellow in colour, with a very delicate and complex nose, notes of almonds and autolysis. The palate is very savoury, with green apple, sea salt and toasty yeast with a lifted, citrus finish. Traditional barrel fermentation adds extra body and structure which adds to the beautiful, lengthy complex finish.

Additional Information: Valdespino is one of the oldest bodegas in Jerez, with a history of Sherry production going back six centuries. Today Valdespino belongs to the Estevez family, who purchased the bodega in 1999. They own 750 hectares of vineyards in Jerez, including the renowned 'Macharnudo' Pago. This vineyard ownership allows Valdespino very close control over grape quality. They are one of the few bodegas to make single-vineyard Sherries.
The mosto/wine (sobretabla) spends one year in the barrel before entering the solera system for fractional blending over eight to ten years, which gives this fino a great complexity and consistency. There are ten-barrel stages (criadera), simpler finos have three. Each stage adds additional complexity to the final wine. The finished fino, with an average age of ten years, is drawn from the last barrel (the solera) and considering the wine is ten years old, it is bursting with freshness and flavour.
