Unusual aromas of apricots and white flowers, full bodied on the palate with a slightly tannic finish, orange, aromatic, floral, wild yeast and brioche all in all very interesting. The acidity is softened, without aggressiveness, making for a well-balanced ensemble.

Additional Information: Matthieu and Emanuelle are a couple making organic wine in Alsace, Matthieu is the son of Marcel Deiss, who has been at the forefront of all that is good to do with Alsatian wines for many years. Emanuelle is the Daughter of Henri Milan who has a big reputation in southern France for producing high quality wines.

When Matthieu and Emanuelle took over the vineyards they immediately started converting the vineyards to organic and practising elements of biodynamics. This process takes many years to complete and they are still working through the last parcels of land.

Carbonic maceration of Riesling and Pinot grapes for 10 days. Alcoholic fermentation in large oak barrels, without any sugar additions, acidification, or commercial yeast. The wine ages for one year on fine lees before being bottled with a very low level of sulfites.
